Hotel-Style Vegetables

Traditional Khichuri hobe

The hotel-style vegetable is absolutely one of the most delicious gravy-type curries. This dish is made with different vegetables and this is the speciality of this item. The vegetables used in it depend on the individual’s choice. It’s a simple but healthy dish and also easy to cook. Green chilli is used to make this dish though it’s not spicy. This dish can be made with either a gravy-based or a dry curry.

Ingredients:

  • 3 tbsp Oil
  • 1 tbsp Five Spices
  • 1 Bay Leaf
  • 1 Cinnamon
  • 2 Cardamom
  • ½ cup Onion
  • 1 tsp Ginger
  • 1 tsp Garlic
  • 1 tsp Coriander Powder
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Turmeric 
  • ½ cup of Each different type of vegetable (only potato and papaya 1 cup)
  • Water
  • Salt

Instructions:

  1. Heat the oil in a pan. Add five spices, bay leaf, cinnamon, cardamom and other spices in the pan.
  2. Then add chopped onions and wait till the fry is translucent.
  3. Add the other necessary ingredients and cook it for 2-3 minutes until the raw smell is gone.
  4. After that, add the vegetables along with water and salt as needed. Cook it for a couple of minutes. 
  5. You can add any masala paste that goes with your taste, then adjust some water as needed and cook for a low flame until it comes to a slow boil.
  6. Finally, add chopped coriander leaves.
  7. Serve it hot to enjoy its delicious taste.

In winter, vegetables are available in variations. However, this item is always available in Bangladeshi local hotels and some restaurants. With roti, paratha, naan and luchi, this vegetable curry is delicious. Try this simple recipe with the vegetables left in your refrigerator.
