In winter, Pitha (Cake) is one of the main items in Bangladesh. Bengali love to make this with huge arrangements. It carries our traditional values. There are so many types of pitha in Bangladesh. Among them ‘Patishapta’ is a good one. This pitha has two parts. One is crepe, the very thin pancake and another is filler which can be made differently. Patishapta is very popular among sweet lovers. In town people usually buy this if they cannot make any. Here is an easy way to make patishapta one can follow.
Ingredients:
Rice flour or maida
Suji (Semolina)
Little bit Salt
Milk
Sugar or gur (Date-palm syrup)
Coconut (Optional)
Regular oil
Instructions:
In a mixing bowl, add rice flour, sugar, suji, salt and milk to make the crepe. Mix all ingredients well until it is combined well. Cover this batter and put it aside. In the meantime prepare the filler. In a pan, take the milk and boil it well. When it starts bubbling, add sugar or gur. Stir this combination until it is getting thick. Add some flour into it and cook for another five minutes. One can use coconut in it for making a different taste. Start making crepe with the batter. Set a non-stick pan on medium heat. Once it is hot apply a bit of oil. With the help of a ladle drop some batter in the middle of the pan and swirl it around. Until it is becoming thin, swirl it carefully. Place the filler middle of this crepe and start folding from one corner with the help of a spatula. All will be rolled and we need to transfer it very carefully on a plate. Your patishapta is ready.
