Traditional Khichuri hobe

Fruit cake is rich in history but it’s the most common in any family get-together or festival like Christmas. As it is easy to make and full of nuts and fruits, people prefer it for their Christmas and New Year’s Eve. It is enriched with nutrients thus its popularity is massive around the world. 

Ingredients:

  • 1 teaspoon baking soda
  • 1 cup full-fat sour cream
  • 1 cup chopped dates
  • 2 cups raisins
  • 1/2 cup chopped cherries 
  • 1 cup chopped walnuts (if available) 
  • 2 cups all-purpose flour
  • 1/2 cup butter
  • 1 cup sugar
  • 1 large egg (room temperature)
  • The rind of one orange
  • 1 teaspoon salt

Fruitcake is just like any other quick bread or loaf by adding many fruits and nuts. You can make a simple batter and then stir the fruits and nuts into it. Then bake it until the colour of the cake turns fresh brown.

A very healthy evening snack

First of all, you need to preheat the oven to 325℉ (160℃). Line the brown baking paper and cut it to fit into the loaf pan. Mix the sour cream and baking soda into a small bowl. Make a combination of raisins, fruits, cherries, dates and nuts into ¼ cup flour and toss them together. Beat the butter and sugar until it becomes fluffy. Mix in the egg, orange cubes, and then the sour cream and baking soda mix. After that, you need to add flour and salt to the mixture. You can mix the fruits and nuts gradually to even the batter of the fruit cake.

Scoop the batter into the loaf pan and press down on the uneven surface. Place the pan into the pre-heat oven to bake the cake. While baking the cake you need to take care of the time. Bake the cake for approximately 1 and ½ hours. Take out the pan and wait for 5 minutes to cool down. Cut the freshly baked fruit cake into slices and serve it with tea or coffee. You can store it in the fridge as well.
