Faluda or Falooda is a cold and sweet dessert containing many ingredients. Though it originated from the Persian dish, it is very popular in Asia. This sweet item is made in a variety of flavours, like Mango Faluda, Ice cream Faluda, Shahi Faluda, etc. It is not only delicious but it also cools your body. It melts inside the mouth like ice cream and gives a refreshing feeling. It is an easy-peasy layered dessert that is a breeze to put up. This layered dessert is made using the instructions below.
Ingredients
• Noodles
• Packet jelly powder
• Sabudana – 1/2 cup
• Full cream milk powder -1/2 cup
• Full cream liquid milk -3 cups
• Sugar -1/3 cup
• Salt – to taste
• Chopped nuts
• Fruits (as per your heart desires)
• Rose syrup / Rooh Afza
• Ice cream
• Pomegranate seeds
Instructions
A saucepan is needed to add milk and bring it to a boil.
Once the milk is boiled, add milk powder simmer the flame to the lowest and stir it frequently.
Once the milk is reduced to ¾ add sugar to it.
Stirring it frequently and reducing the milk to half.
Transfer it to a bowl, cover it and refrigerate it to cool completely.
Prepare the jelly as per packet instructions. Let it be set in the refrigerator until gets formed, about 1 hour.
Soak ½ cup of Sabudana in about 1 cup of water, stir it well, and set aside for 30 minutes. Once they swell, drain the excess water in a strainer and set aside.
Boil the noodles adding salt and drain the excess water.
Garnishing
At the final stage, assemble the Faluda. Take a tall glass, and add about 2 tablespoons of different colours of jelly, noodles, fruits, sweet basil seeds, rose syrup or rooh afza. Pour the chilled and thickened milk, and top with ice cream and pomegranate seeds. You can also garnish it with nuts. No specific rules need to garnish.
